An easy peasy and ultra healthy winter stew
I got this from the book Medical Medium, which contains a bunch of recipes. You might think author Anthony William is a con artist, but no matter what you think about him, he knows how to make a damn good vegan soup!
Even though there are over 10 ingredients, this is so easy even a kid could make it. Bonus for the no-SOS (salt, oil, sugar) folks, as there’s no oil or sugar in this, and you could take out the salt if you wanted to. It’s a very adaptable recipe with a ton of those winter spices to keep you warm.
Ingredients:
1 chopped onion
3 diced sweet potatoes
3 minced garlic cloves
1 large or 2 small chopped zucchini
1 tsp salt
1 tsp cumin
1 tsp coriander
1 tsp paprika
1/2 tsp turmeric
1/4 tsp red pepper flakes
1 diced tomato
2 tbsp tomato paste
1.5 c hot water
1/4 c fresh cilantro to garnish with each serving
Heat a saucepan or pot on medium-high heat. Add the onion, sweet potato, and garlic. Add some water to avoid the vegetables from sticking to the bottom. Cook for 3 to 5 minutes. Add the zucchini, all the spices, tomato, tomato paste, and hot water and stir well. Put the lid on, lower the heat, and simmer for 10 minutes.
Remove the lid and cook for another 10 minutes or until the potatoes are cooked through. Serve with fresh cilantro. Serves 5-6.
